Asst. Prof. Dr. Somsak's research focuses on postharvest physiology, biochemistry, and technology of horticultural produce, emphasizing extending storage and shelf life. He investigates the metabolic and physiological changes in fruits and vegetables after harvest to develop methods for preserving quality and reducing spoilage. A key area of his work is the use of edible coatings to minimize moisture loss, slow respiration, and inhibit microbial growth. He collaborates with international researchers from Japan, India, and other countries. These partnerships aim to integrate advanced technologies and approaches to improve postharvest practices.
