Asst. Prof. Dr. Somsak's research focuses on postharvest physiology, biochemistry, and technology of horticultural produce, emphasizing extending storage and shelf life. He investigates the metabolic and physiological changes in fruits and vegetables after harvest to develop methods for preserving quality and reducing spoilage.
